So my hubs (J) called me up on Friday when I sent him to fulfill some pregnancy cravings. (key lime pie = yummo) He was more than a little excited about a cake mix sale going on. (who has the cravings here?) He is like what can you make with yellow cake mix or funfetti?
So I found this recipe online Orange Cake. I changed it up a bit. It calls for lemon pudding but vanilla (what I had on hand) works just fine. I didn’t use all the glaze it calls for. I had about 1/4 left over. I thought it was more than enough my cake was drowning.
I have to say it was pretty good! I’m not a big cook/baker at all. If I bake anything it’s usually very simple. I’m a 4 ingredients tops kinda gal! Something comes over me when I look at a complicated recipe and I shut down. This was an easy recipe that doesn’t really taste like cake mix. *bonus* It was super moist and had a nice citrus flavor. I think J enjoyed it. It’s almost been demolished. Now I need to figure out what to do with the other 3 boxes of mix. Any interesting ideas for funfetti?
Here is the recipe below with a little change.
Cake
1 (18.25 ounce) package yellow cake mix
1/2 cup vegetable oil
1 tsp lemon extract
4 eggs
Glaze
1/3 cup of butter
2/3 cup of sugar
1/3 cup of orange juice
*Grease a bundt pan and preheat your oven to 325.
*Mix together your cake and pudding mix. Then you will make a well in the center and pour in your orange juice, eggs, oil, and lemon extract.
*Pour batter into your bundt pan.
*Bake for 50 minutes. Let it cool in the pan for about 10 minutes and then dump it out to cool completely.
* While the cake is cooling, make your glaze. In a sauce pan your going to cook your OJ, sugar, and butter together for about 2 minutes or until it gets a little nice and bubbly.
*Pour all over the top of your cake. Like I said I didn’t use all of it but you most certainly can.
Just after a day and only two people. That’s how we do things.
